Orza deer is one of the most prized preserves for its versatility and qualities. With this preserve we can make endless recipes, apart from consuming it as a delicious appetizer.

The deer in daggerboard is still pieces of deer clean of fat, fried in plenty of extra virgin olive oil, and then packaged for sale.

In this recipe we bring a simple way to consume this type of food, a delicious deer in lard presented on a lettuce heart salad and cherry tomatoes.

About the vinaigrette, a delicious sweet and sour vinaigrette that we can easily replace with the vinaigrette that we like the most at home.

Ingredients

To prepare the recipe for salad with deer in daggerboard for two people we will need the following ingredients:

1 or 2 lettuce hearts
12 cherry tomatoes
2 or 3 pieces of deer in daggerboard
4 tablespoons of extra virgin olive oil
2 tablespoons of vinegar
1 tablespoon maple syrup
Salt
Oregano

Recipe preparation

We clean the buds of their ugliest outer leaves.
Cut the buds so that we have fine strips.
We distribute on a salad bowl.
Cut the cherry tomatoes and intersperse them with the strips of lettuce hearts.
We take two or three pieces of daggerboard deer out of our can.
With a sharp knife, and carefully, we cut thin slices.
We put our deer in daggerboard cut all over the salad.
In a bowl, mix the oil with the vinegar, maple syrup, salt and oregano.
Mix well to emulsify the extra virgin olive oil.
Divide the vinaigrette all over the salad.

Conclution

If we don’t have maple syrup at home and we want to give the vinaigrette that sweet taste, we can put a little honey, a little Modena reduction or Pedro Jiménez reduction. In any case, it will be a delicious vinaigrette.

In the same way that we have added oregano to our vinaigrette, we can replace it with thyme or rosemary. Any of these aromatic herbs will come in handy in our salad. Ideal salad to share, but that we can serve in individual plates and be a perfect first course for these summer lunches that a fresh salad with personality suits us so well.
