Today I bring you a recipe to lick your fingers 😏. Some Mallard duck thighs from Artemonte, ready to cook, which are truly crazy.
This is a perfect recipe for Christmas or for a special occasion. Although this is not a difficult recipe to prepare, it does take a long time, so before you start with it, you have to have about 3 hours.
Ingredients
500 gr. Mallard duck thighs Artemonte
Olive oil
100 ml. soy sauce
300/500 ml. chicken soup
200 ml. Orange juice
Salt and pepper
1 cinnamon stick
50 gr. Butter
100 gr. sugar
Preparation
The first thing we are going to do is season the Artemonte mallard duck thighs with salt and pepper.
Put plenty of oil in a saucepan and heat over low-medium heat.
Put the thighs in the oil, with the piece of butter, the shallots, the cinnamon stick and the peel of an orange, mix everything and let it cook for 1 hour over low heat and covered, stirring from time to time.
While in a frying pan, make a caramel with the sugar: to do this, add the sugar in the frying pan and stir until it is golden brown, turn off the heat and let it cool for a few minutes. Add the soy sauce and orange juice to the caramel, return it to the heat and mix until fully incorporated, then add the broth and turn off the heat.
Once the hour has passed, add the thighs to the previous sauce and cook again for about 1 hour, adding more broth as needed.
Once the meat is soft and comes off the bone, let the sauce reduce until it is glazed and thick.
Conclution
To accompany these delicious thighs I made some green asparagus in the oil where the thighs were cooked over low heat for 5-7 min. to stay al dente. Serve nicely with the shallots and some raspberries.
