Preparing salads that contain fruit and do not contain lettuce leaves is preparing an exotic salad that will greatly surprise our diners. We can prepare the salad in a large salad bowl to place in the center of the table and share, or we can serve the salads in individual bowls so that each person has their own.

A very simple salad, a combination of ingredients that balances it a lot in terms of flavor and above all, very easy to prepare.

Ingredients

To prepare the recipe for this partridge and mango salad we will need the following ingredients:

1 boat of pickled partridge
2 mangoes
1 large bag of lamb’s lettuce
4 tablespoons of extra virgin olive oil
2 tablespoons of apple cider vinegar
2 tablespoons of Pedro Jiménez reduction vinegar
2 tablespoons of honey
Seeds to decorate

Recipe preparation

We put the partridge to drain in a colander and reserve.
We distribute the lamb’s lettuce among the four bowls.
Cut the mangoes into four parts, remove the bone, peel and cut into cubes.
Put the mango in the salad, stir to mix and place the diced mango again on top.
Divide the drained pickled partridge among the four bowls.
Prepare the vinaigrette, mixing the extra virgin olive oil with the apple cider vinegar, the Pedro Jiménez reduction vinegar and honey with a whisk.
Divide the vinaigrette among the four salads.
Decorate with a little assorted seeds.

Conclution

We can prepare this salad with a reasonable amount of time in advance. Lamb’s lettuce stays crunchy longer than lettuce leaves. The vinaigrette, if mixed well, will not lose its texture either.

If we do not have a rod to prepare the vinaigrette, we can use a closed boat and shake or a fork.

A very simple salad that we will enjoy a lot.
