A recipe for empanada that we assemble with sheets of puff pastry and fill with a red onion and zucchini sauce, to which at the last moment we will add a little venison jerky with thyme. We will have a very soft empanada that contrasts perfectly with the intense and rich flavor of the venison jerky with thyme.

As the cecina is already cured, we will add it to the sauce at the end, already removed from the heat, and let it cool. This way, the flavors of the filling ingredients will blend together as they cool so you can assemble the empanada.

One large empanada or two individual empanadas, you choose.

Ingredients

1 piece of venison jerky with thyme
1 puff pastry sheet
1 purple onion
1 green zucchini
Salt
Ground pepper
Extra virgin olive oil
1 egg to paint

Recipe to prepare the deer pie with thyme

Cut the onion into fine julienne strips and put it in a casserole with a bottom of extra virgin olive oil.
We make the sauce over low heat and cover the casserole.
Cut the zucchini into half moons and add to the casserole. Add a little salt and ground pepper. When we have the sauce ready, we remove it from the heat.
We cut the venison into thick slices and then into thin strips. Add the venison with thyme to the sauce, mix well and cover the saucepan. Let the filling cool.
We extend the puff pastry sheet. We cut into two halves. We put the filling distributed between the two puff pastries. We cover the filling with half of the puff pastry that we have free. Seal the edges well with a fork. We painted with the beaten egg.
Bake at 160 degrees for about 20 minutes and ready to serve.
