Recipe with which we are going to succeed at the table before our diners. Either on a normal day, a special day or to prepare for the upcoming Christmas. A very simple recipe to make and with which we obtain wonderful and tasty results.

It has been cooked in the Crock Pot at a low temperature, but we can make the same recipe both in a normal casserole, in a Cocotte or in a quick cooker. We just have to adjust the times to have the meat of this tender fallow deer shank.

Ingredients

To prepare the fallow deer hock recipe we will need the following ingredients:

1 or 2 fallow deer shank
Salt
Ginger
garlic powder
Oregano
Laurel
Thyme
Rosemary
Extra virgin olive oil
Balsamic vinegar
Sherry vinager
1 onion
1 carrot
100 grams of mushrooms
1 glass of red wine

Recipe preparation

Defrost the fallow deer shank.
Mix the spices with the salt and ground pepper.
Place the fallow deer shank inside the Crock Pot bucket and add the spices that we have mixed.
Add a few threads of extra virgin olive oil.
Add a little sherry vinegar and balsamic vinegar.
We introduce one or two bay leaves.
We take the bucket to the Crock Pot, cover and leave 12 hours at high temperature.
We already have the fallow deer shank ready, which we can serve as is or remove the meat from the bone and serve without the bone.
Reserve the meat and prepare the garnish.
In a large frying pan, fry the onion cut into thin julienne strips, the grated carrot and the sliced mushrooms.
When we have the sauce ready, season with salt and pepper and add the fallow shank meat that we have reserved.
Add all the juice that has remained in the Crock Pot bucket, add the red wine and let the sauce reduce for a few minutes over medium-high heat.
We rectify salt if necessary and serve

Conclution

This fallow shank was very tender, full of flavour, and the garnish with which we served it was a simple garnish that did not detract from the meat.

Ideal recipe for special moments, but that we can enjoy in the same way at any time. Every day is unique and every day we deserve to eat healthy, balanced with simple recipes full of flavor.

Fallow deer meat is exquisite meat, without any fat and with a very pleasant flavor. The combination with the vinegars and the red wine, together with the spices that we have added, makes it even richer if possible.
