Partridge breasts are one of those flushed, juicy poultry meats with hardly any calories. They are very rich in flavor and perfect for cooking in stews.
Recipe for the whole family, for the day to day, for a more special occasion. At any time it is possible.
We can cook the whole partridge breasts, as is or we can cut them into cubes.
Ingredients
To prepare the recipe for partridge breasts with mushrooms we will need the following ingredients:
500 gr of partridge breasts
2 onions
1 tray of mushrooms
Salt
Ground pepper
garlic powder
1 glass of wine
Extra virgin olive oil
French fries to accompany
Recipe preparation
Defrost the partridge breasts.
We remove edges of fat or ready skin.
We season.
In a casserole with a bottom of extra virgin olive oil, brown the partridge breasts on both sides.
We withdraw and reserve.
Cut the onions into julienne strips and fry them in the casserole over medium heat.
Add the breasts when the onion is tender and transparent.
Add the mushrooms, laminated or cut into quarters.
Season with salt and pepper, add garlic powder and a glass of wine.
Mix well and add a little water.
Let cook over medium heat until the sauce has reduced.
Peel, chop and fry the potatoes.
We serve the partridge breasts with mushrooms on top of a bed of fried potatoes.
To this recipe we can add if we want a little carrot, cut into fine cubes or grated.
If we want to give it a touch of fat, we can add some cubes of bacon to the sauce, before adding the wine, so that they brown and release their fat into the stew.
