Deer jerky cannelloni is a very original recipe with great flavor thanks to the flavor of jerky.
Ingredients for the cannelloni:
deer jerky
750 gr of concasse tomato
100 gr of arugula
chopped fresh dill
Poppy seeds for pistachio green garlic;
250 gr of peeled pistachio
1 clove garlic
400 grams of water
10cl of olive oil
5 cl of apple cider vinegar
salt and freshly ground black pepper
Green garlic preparation:
Prepare all the ingredients in a bowl and beat at high speed, so that the oil emulsifies well.
Season with salt and pepper and let cool while you prepare the rest.
Now the filling;
Blanch the tomatoes, separate and leave the skin and seeds for another preparation (to prepare a tomato sauce, for example).
Cut into concasse and add the chopped fresh dill and poppy seed.
Mix everything well and finally add the arugula and salt and pepper.
Go filling the slices of deer jerky and roll in the shape of the cannelloni. And finally for the plating, we will put a taste of green garlic on the plate and the cannelloni on top.
