The cheek is a very tasty lean meat that, in this specific case, the wild boar cheek, makes it even more special. A meat full of flavor, with hardly any fat, with which we will enjoy a lot in this recipe.

A recipe for wild boar cheeks with which we can enjoy both a special day and a normal day.

We are going to cook this wild boar cheek with gnocchi in the pressure cooker, but if we want to prepare the recipe in a traditional pot, we just have to keep the meat longer, over low heat, until it is very tender. A true delight.

Ingredients

To prepare the recipe for wild boar cheeks with gnocchi we will need the following ingredients:

1 kg of wild boar cheeks
4 garlic cloves
1 onion
1 green pepper
1 red bell pepper
2 carrots
Extra virgin olive oil
Salt
Ground pepper
scented wine
Flour
Butter
1 bag of gnocchi

Recipe preparation

Defrost the wild boar cheeks and clean well from lint and fat.
Season with salt and pepper and pass through flour.
Fry in abundant extra virgin olive oil, brown on both sides and reserve.
In the pressure cooker we put a little extra virgin olive oil and fry the garlic cloves, the onion, the green pepper and the red pepper.
When the vegetables are tender and ready, we add a generous stream of oloroso wine.
We bring to a boil and shred everything.
Peel and chop the carrots,
Add the carrots to the pot and mix.
Add the wild boar cheeks and season with salt and pepper.
We close the pressure cooker, select position 2 and let it whistle for 20 minutes.
When the pot has lost all the steam, open it and put it on the heat, uncovered so that the sauce thickens.
In a separate casserole, add a tablespoon of butter and melt.
Add the gnocchi and half a glass of water.
We leave on the fire, stirring, until all the liquid evaporates.
Mix the wild boar cheeks with the gnocchi and bring to a boil.
We rectify salt.
We serve.

Conclution

There are many variations to this recipe. For example, we can substitute wine for any other wine, fine, white, Rioja, red, etc. Oloroso wine has a touch of sweetness that makes it quite rich for this type of game meat.

Along with the carrots we can put more vegetables, whether they are peas, green beans, etc.

We can replace the gnocchi with a fried potato, rice, or even pasta.
