With this recipe we can make many variations. Once the partridges are cooked, we have used the resulting broth to cook the macaroni and thus give them more flavour, but we can use that broth to add it to other recipes or we can even serve it as a consommé with a little angel hair type noodles, a little chopped boiled egg and a few cubes of ham.
Once the partridges are cooked, we can use the meat to make croquettes, dumplings, empanadas or to make that kind of “bolognese” with which we serve these gratin macaroni.
Never have partridges given us so much play in the kitchen. Go ahead and try each and every one of the options that we tell you about.
Ingredients for 4 people
To prepare the recipe for these macaroni gratin with partridges we will need the following ingredients:
300 gr of macaroni
2 partridges Artemonte
1 carrot
2 celery sticks
1 leek
1 onion
150-200 gr of homemade tomato sauce
1 onion
1 leek
50 gr of extra virgin olive oil
1 splash of wine
Salt
Ground pepper
For the béchamel: 400 gr of whole milk
40 grams of flour
20 gr of extra virgin olive oil
Salt
Ground pepper
Nutmeg
Grated cheese to cover our macaroni
Recipe preparation
Put the vegetables, the peeled and chopped carrot together with the celery, the leek and the onion in a pot with plenty of water. We add the partridges, which can be frozen or thawed, it doesn’t matter. If they are frozen, it will just take a little longer for them to come to a boil. Add a little salt and cook over high heat for an hour and a half or so. Once finished, we reserve.
We make the homemade tomato and reserve. We can also use brick fried tomato.
Chop the onion and the leek. We transfer it to the Thermomix glass and add the 50 gr of extra virgin olive oil. We select 7 minutes, 120 degrees of temperature speed 1.
Strain broth and reserve.
Crumble the meat of the partridges and chop.
Add the meat of the partridges to the Thermomix glass. Season with salt and pepper and add a little wine. We remove and select 5 minutes, 120 degrees of temperature, speed 2.
Add the homemade tomato sauce and mix with the spatula. If we see that it needs more tomato because it is too dry, add it until it has the texture that we like the most.
Cook the macaroni in the partridge broth that we have reserved.
Once the macaroni is tender, drain well and cool.
It’s time to assemble the dish, for this we put a little partridge sauce in the bottom of the dish that we are going to use and a layer of macaroni on top. Again a layer of partridge sauce and another of macaroni, like this until we finish, always ending with the last layer of partridge sauce.
We make the bechamel, as we like, in this case we put all the ingredients together in the Thermomix glass, milk, flour, extra virgin olive oil, salt, ground pepper and nutmeg. We select 8 minutes, 100 degrees of temperature, speed 4.
We cover the entire source with the bechamel that we have prepared.
We cover again with the grated cheese, the one we want, have or like the most, but that is a cheese that melts well.
Bake in the oven, 180 degrees, until the cheese has melted and browned to our liking. The time will always depend on the power of our oven.
We slice and serve.
Conclusion
Although in this recipe we have used the Thermomix, this recipe can be perfectly made in a traditional way. We just have to follow the same steps, but cooking in a pot and on the stove, always over medium heat so that everything cooks slowly. Some macaroons that are always very well received at the table.
