Fresh deer chorizo with chickpeas recipe
Ingredients
To prepare the recipe for fresh deer chorizo with chickpeas we will need the following ingredients:
300 gr of fresh deer chorizo
1 jar of chickpeas
1 onion
Extra virgin olive oil
Salt
1 sprig of dried thyme
1 bay leaf
Preparation
Chop the onion. We can chop it by hand or in the Thermomix, 5 seconds speed 5.
Put the onion in a saucepan and add a little extra virgin olive oil.
Let the sauce simmer, stirring occasionally, until the onion is tender and translucent.
While the sauce is being made, we are cutting the fresh venison chorizo into small slices.
When the onion is fried, add the fresh venison chorizo.
When we have the chorizo well sautéed and integrated with the onion, we add the sprig of thyme and the bay leaf.
We put a little salt.
We incorporate the chickpeas. Canned chickpeas must be drained and washed beforehand to remove any possible remains of gelatin that may have remained.
Mix carefully so that the chickpeas do not break.
Let the ingredients mix with the flavors and aromas over low heat.
Let the pot simmer, covered, for about 5 minutes.
We rectify salt if necessary.
We serve.
Conclution
The fresh deer chorizo is that great alternative to the fresh chorizo with which we usually cook. Much less fat, much less calories, and much healthier.
We can cook this deer sausage, not only with chickpeas as we show you today, but with any other legume, be it lentils or beans.
We can resort to legumes already prepared in boats, which we just have to drain and add to the casserole, but let’s not forget that we can make the same recipe with dried legumes. For this we only have to soak the legumes the night before. Drain, put clean water and cook those legumes that we have chosen, in abundant water with a little salt, until they are tender. Once we have cooked the selected legume, we only have to drain it well and add it to the casserole where we have our fresh deer chorizo.
If you are one of those who add fresh chorizo to the legume stew, right at the last moment of cooking, you can do it in the same way. You will have the legume stew, whether they are chickpeas, broad beans or lentils, full of flavor thanks to the fresh deer chorizo.
In sauteed or scrambled eggs with green beans or mushrooms, there are other very tasty and simple ways to introduce this fantastic ingredient, such as fresh deer chorizo.
As you can see, fresh deer chorizo has many possibilities in the kitchen, so we are going to take advantage of them.
