If there is an aperitif that should never be missing from the Christmas table, or in any important celebration, it is a delicious empanada. The empanada can be made with many fillings and in this case we are going to prepare it with one of Artemonte’s products which, while on its own is a true delight, forming part of this empanada is truly marvelous. An exquisite, different and very tasty bite.

A very simple empanada to make, which we can do as I indicate in the recipe or we can adapt it to our tastes. It admits many variations.

Ingredients

To prepare the pickled pheasant empanada recipe we will need the following ingredients:

1 jar of Artemonte pickled pheasant
2 sheets of fresh empanada dough
1 onion
4 garlic cloves
4 ripe red tomatoes
1 red bell pepper
Salt
Ground pepper
Extra virgin olive oil
2 eggs to cook
1 egg to paint

Pickled Pheasant Pie

Recipe preparation

We chop all the vegetables.
We put all the vegetables in a pan with a bottom of extra virgin olive oil and make the sauce over medium heat.
Boil the eggs and chop them.
Drain the crumbled pheasant in marinade well.
Mix the eggs and the pickled crumbled pheasant with the vegetable sauce, season with salt and pepper and let cool completely.
We extend the first sheet of empanada dough.
Place the filling in the center and spread well without reaching the edges of the dough.
Spread the second sheet of empanada dough over the filling and remove the paper.
We match the edges and seal well.
We make a small hole in the center of the empanada so that, when baking, it breathes and does not open up.
Paint the empanada with a beaten egg.
We take the empanada to the oven, previously preheated, and let it bake for about 20 to 40 minutes, at 180 degrees. This time will vary depending on the power of our oven, so we will be watching and we will take the empanada out of the oven when we see it golden and crunchy.

Conclusion

Empanada full of flavor that should not be missing in those moments where we gather around a table, either for a large celebration or for a day where we want to enjoy a delicious appetizer.

An empanada is a very simple snack to eat so we can enjoy it both in formal meals and in more informal meals. It has a place in all of them and if it is with a rich pickled pheasant filling, even better.
